the better part of a year, this dark saison has been quietly
aging in French Oak barrels. A complex French Farmhouse- style beer,
Ciel de Nuit has a rich, dark profile with a spicey kick from a
French saison yeast strain. It earns the sour characteristic as
a result of a secondary fermentation in barrels with a special blend
of wild yeast and bacteria.
Standing tall at 7.0% ABV, Spinnakers' second bottled sour is an
exquisite contrast from it's predecessor, Happy New Beer.
We recommend enjoying the Ciel de Nuit at cellar temp. (about 8
degrees) under the BC night sky.
