New Beer Release {Spinnakers Dark Sour Saison}

{Monday January 11, 2015}

Happy New Year! To celebrate the long nights in the chilly first month of 2016, we give you
For the better part of a year, this dark saison has been quietly aging in French Oak barrels. A complex French Farmhouse- style beer, Ciel de Nuit has a rich, dark profile with a spicey kick from a French saison yeast strain. It earns the sour characteristic as a result of a secondary fermentation in barrels with a special blend of wild yeast and bacteria.

Standing tall at 7.0% ABV, Spinnakers' second bottled sour is an exquisite contrast from it's predecessor, Happy New Beer. We recommend enjoying the Ciel de Nuit at cellar temp. (about 8 degrees) under the BC night sky.

Brewery Tasting Notes:
  •  Soft, present sour flavor
  • Complex and funky
  • Tannic structures present
  • Brett on the nose
  • Soft tartness
  • Warmer temperatures unlock further complexity and flavor
  • Recommend trying a bottle off of the shelf and storing one for 6+ months

On shelves at participating private and Government BC liquor stores.

 If you've never tried a sour, or aren't sure if you'll like it, try our Sour Flight in the pub. 5oz. tasters of four different sour varieties. Check out our blog for an in depth look at the Barrel program here at Spinnakers
